Food of the Week: Spinach, Mushrooms, and Carmelized Onions



Welcome to a new weekly feature, beloved readers. It's entitled: "Food of the Week: A Girl Learns to Cook." Last summer I briefly ventured into cooking, but then fell right off that wagon. So now I'm determined to climb back on!

Every Thursdays I'll share a simple recipe I've tried out during the previous week. I'll include the recipe, the cookbook, and some photos I took during the adventure (I used the free online site Picnik to put together this week's collage).

This week's recipe is from the cookbook The Balanced Plate. The name of the recipe is: "Spinach, Mushrooms, and Carmelized Onions."


I'll put a photo of the recipe at the bottom of this entry, and if you click on the picture - the recipe should be large enough to read. I cut the recipe in half (and made some small modifications since I didn't have all the ingredients) and gobbled it all up tonight for dinner. Here's a summary:

Primary ingredients:

1 red onion (sliced finely)

10 mushrooms (chopped)

1/2 bag of spinach (about 3 cups)

2 tablespoons of olive oil

2 teaspoons of soy sauce

1 teaspoon of agave nectar (or maple syrup)

salt, pepper, parsley

Step 1: Warm up the oil, and then add in the onion. Let it cook about 5 minutes. Then add in the soy sauce and agave nectar (agave nectar is really worth purchasing because you can use it in all sorts of recipes; it's great). Let it cook about 10 more minutes. Stir frequently and make sure it doesn't burn. You can keep it at a fairly low/medium heat.

Step 2: Add in the tasty mushrooms! Cook for about 4 more minutes.

Step 3: Add in the spices and the spinach. I let it cook for about 3 minutes so the spinach got semi-wilted but kept its pretty green color.

Final Product: Total deliciousness! And majorly healthy. It's so good. Why haven't I always adored spinach? It's brilliant. I ate it with half an english muffin with cream cheese, cucumber, and smoked salmon on top.
