Cookin' It Up: Baked Cranberry French Toast

I made something delicious!  Not only was it fully edible, my mom even said: "Emily, I think this is the best thing you've made so far." We ate it on Sunday night before the Golden Globes! Prepare yourselves.  This is a good one.

Ingredients:

4 oz cream cheese (cubed)
3-4 cups of bread (cubed) - I used a very hearty homemade wheat bread I got as a gift
6 eggs
1 cup almond milk
1/4 cup maple syrup
1/2 tsp cinnamon
1/4 cup dried cranberries

Combine the cubed bread, the cubed cream cheese, and the cranberries. Place them into a pan. I never pay much attention to pan size, but that would probably be good, huh?

Next, mix up the eggs, almond milk, maple syrup, and cinnamon. Add them to the bread/cream cheese/cranberry mix.  Let it sit in the fridge for a few hours or even overnight.

Then bake at 350 for at least 40 minutes (up to 1 hour).  It is very delicious, and one piece is quite filling.  I recommend using a dense bread for this recipe.  If you are using a regular store loaf, you will probably need to use a bit more bread.  Either way, I think you'll like it!  Serve with a little maple syrup.  Obviously real maple syrup is preferred, but I used Aunt Jemima and it was great.

On Monday I had one piece for breakfast and another for lunch!  It makes for very delicious leftovers heated up for 40 seconds in the microwave.
